Chewy bites of cookie dough filled with tart dried apple bits and cranberries turned out to be a total win with my family. I loved this variation on the typically very sweet cookie recipes that abound in my house. Don't get me wrong, the coconut makes these plenty sweet, but they aren't loaded with chocolate or overwhelmingly sugary.
