Olives, tomatoes, meats, and cheese are piled onto skewers, along with plenty of crunchy lettuce. While this one-handed salad is my idea of the perfect party food, my kids declared this one of the best lunches we've ever made. My youngest son, the child with olives on every fingertip every chance he gets, happily filled an entire skewer with olives and tomatoes.
When the California Olive Committee asked me if I'd like to share a favorite way to snack on olives, I almost laughed. I buy olives constantly, yet they don't always make it into the planned dishes. The minute my boys spy a can of olives in the pantry, they ask if we can open it for snacking. For my family, simplicity is best when olives are involved, and these salad snacks are as simple as it gets!
