The Best Chicken Tetrazzini
Almost ten years ago, a very sweet friend brought my family a pan of this Chicken Tetrazzini. It was a night just a few days after my middle son was born; in the midst of our new baby fog and sleep deprivation, we managed to eat an absurd amount of this dish. I promised Sean I'd get the recipe from her as soon as possible. She shared the recipe with me and this pasta has made regular appearances on our table every since. This is easily the best chicken and pasta dish I've ever tasted!

Whipped Strawberry Honey Butter
I spent this past weekend playing in the sun and enjoying some fun and relaxing downtime with two of the best friends a girl could ask for. We stayed at the gorgeous Phoenician resort in Scottsdale, ate as much amazing food as we were able, and greatly enjoyed being waited on and pampered all weekend!
On Saturday, we wandered out to Scottsdale Fashion Square and finished our morning with lunch at NM Cafe in Neiman Marcus. I hadn't eaten there before, and in case you haven't either, I'll tell you that our favorite part of the meal was the little dish of strawberry butter and the popover that they brought out while we waited for our meal. I knew that amazing butter would be re-created in my kitchen just as soon as I got back home!

Creamy Mexican Chicken and Corn Soup

Tender chicken and sweet corn are combined in a creamy soup with just enough heat to warm your mouth without setting it on fire. My entire family loves this soup, even my non-spice loving middle son. Combine that with the fact that it takes barely 20 minutes to pull this soup together, and you'll understand why this is a frequently eaten meal in our house! Quick soups are one of my favorite ways to get dinner on the table in the fall.
I loved our homemade corn stock last year so much; my plan for saving it in the freezer didn't happen. I just kept using it until it was gone. (If you don't have corn stock stashed away, chicken stock works great too.) I'm counting down the days until the corn festival, so that I can get my fill of all our favorite corn recipes once again!

Asparagus, Bacon, Corn, and Sweet Potato Skillet
Tender, slightly browned sweet potatoes, salty bacon pieces, fresh corn cooked just until warm and asparagus that is tender and still just a little bit crisp are all tossed together with just a drizzle of balsamic. This was something unexpected that I pulled together for a dinner side dish a few years ago, using odds and ends from the refrigerator.
I enjoyed the sweet and salty mix of the potatoes and the bacon combined with the crunch of the fresh vegetables. This is a great mix of textures and flavors. My kids liked this so much, my oldest asked for seconds. Seconds of a vegetable side dish? That earned this dish a spot in our regular line up.
I've served these vegetables on their own as a casual lunch and as a side dish to accompany beef, chicken, or pork. I've added the leftover vegetables to a quiche, and I've tossed them onto a salad. This is one of the most versatile vegetable dishes you can imagine.

Chocolate Raspberry Brownies {traditional and gluten free recipes}
I shared this batch of brownies with a friend's family and the message she sent me later still has me laughing, "Son, age 9, mouthful of brownie & something chocolate-y in his fingers: "This brownie thing is...(gulp, thoughtful gaze at the ceiling)...it's PERFECTION. (Happily moans, then licks chocolate off fingers)... I heartily agree!"
I'm calling that a total win. I enjoyed a brownie on it's own and thought it was heavenly, then I topped a warm one with a scoop of vanilla ice cream: Pure chocolate raspberry heaven!

Prior to starting my own Pork Bucket List, I had only tasted pork belly once and I LOVED it. This is a rich, flavor packed meat and a little bit of it goes a long ways. Pork belly is much more flavorful than a traditional pork roast, with a hint of the smokiness of bacon. Tender bites of meat that almost melt in your mouth, next to crunchy, crackling skin is a fantastic combination.
Peaches and Cream French Toast Casserole
It took me just a few minutes to slice the bread and the peaches, stir together the cream and eggs, and then tuck the dish into the refrigerator for the night. The next morning, I turned on the oven while I started the coffee. I set the cold casserole in the warm oven and sat down to sip coffee and watch cartoons with the kids; while breakfast baked and filled our house with the delicious aroma of baking peaches. I'm reminded once more how nice make-ahead breakfasts are for relaxed mornings!
Crispy Cholula Chicken
My family couldn't guess the ingredient in the crunchy crust, and even after I told them what it was, they still didn't believe that there were corn flakes in the recipe. I've now made this chicken three times, with boneless skinless chicken breast fillets, with boneless skinless chicken thighs, and with bone-in chicken drumsticks. The chicken turns out juicy inside and crunchy outside every single time!

Salted Caramel Ice Cream
Salted caramel is a beautiful thing. If you haven't yet tried it, get to the stove and stir some together just as soon as possible. Just a tiny sprinkling of salt stirred into some warm caramel, one taste and you'll understand its popularity. And, if you haven't made your own caramel sauce yet, get on it! You'll thank me. Homemade caramel sauce is dangerously easy to make and like so many other things, it tastes ten time better than anything you can buy from a store.

Vegetable Tian
Vegetable Tians are so pretty to look at, you might think they are a complicated side dish. My youngest son helped me layer this one: he calls it a vegetable puzzle. Layer the alternating slices around the dish and fit them in as best you can. The beauty of the tian is really in how simple it is. You aren't standing over a stove sautéing anything more than the onions. Once everything is in the dish, cover it, bake, and walk away. That is my favorite kind of cooking!

Crunchy Brownie Crisps {traditional and gluten free recipes}
If you haven't tried this yet, you really do need to. It's a snack / dessert like no other! I knew I needed to create my own version so that my family would be able to enjoy it as often as we wanted. Lucky for me, my friend Rebecca beat me to it and I barely had to adapt her recipe to meet our needs.
This is a gluten free homemade version of the very well known crispy crunchy brownies. My kids went crazy over this treat and my friends and I enjoyed ours with bowls of ice cream last last night. Sizzling Summer Retreat - Scottsdale, AZ
Sunshine, fantastic food, spa days, and time spent with friends is a perfect combination for a getaway weekend! The lovely FireSky Resort in Scottsdale hosted TSRI's Sizzling Summer Retreat and it was fabulous. Chad and Donna from The Slow Roasted Italian coordinated everything and they did an amazing job with it all; from a beautiful location, to fabulous food around the clock, to a wine tasting and food pairing, spa visits, and time at the pool. We talked and ate and laughed and then ate some more; the whole weekend was wonderfully relaxing.

Italian White Bean, Cabbage, and Sausage Soup
This was a dinner that I pulled together without any advance planning at all. (The ingredients were about all we had in the house after a couple weeks of travel!) This soup turned out so well that my husband commented twice about how much he liked it, so I decided to photograph my dinner before sitting down to eat it!
Ginger Chicken and Broccoli Stir Fry
Tender strips of chicken, and hot, crisp vegetables combined with an Asian inspired sauce is one of the easiest and most popular ways that I get dinner on the table. Broccoli is one of my favorite vegetables to use in a stir fry. The florets hold so much sauce and each bite is full of flavor. The oyster sauce in this recipe adds a savory note that we all enjoyed.
Most of our Asian dishes incorporate a bit of heat or spice, however this is a very flavorful and delicious dish that my whole family enjoyed without any heat at all. If you're like me and can't have too many easy stir-fry dinners, here are a few more you'll want to save for later!

Years before I started blogging, when I first started baking gluten free treats for a friend of mine, the recipes I found were completely overwhelming. Special flours, starches, and gums, careful treatment of the doughs, delicate baking instructions, and confusing instructions, all combined to make me toss more than a few cookies into the trash.
I promise you that NONE of these recipes are like that. These are some of the easiest gluten free desserts we make and every last one of them can be made with ingredients that are likely already in your pantry. No specialty flours, tools, or skills required!
Many times, when you need a gluten free dessert, it's for a dinner guest or a friend, and it just doesn't make sense to buy several different specialty flours just to make a single recipe. (On the other hand, if you plan to do more than the occasional gluten free baked goods, I have a huge index of gluten free sweets and treats that we love.
