The Best Chicken Tetrazzini

The BEST Chicken Tetrazzini {traditional and gluten free recipes included} - by Barefeet In The Kitchen
Chicken, mushrooms, and pasta are tossed together in a creamy, garlicky sauce before being sprinkled with Parmesan and baked for just long enough to melt it all together.

Almost ten years ago, a very sweet friend brought my family a pan of this Chicken Tetrazzini. It was a night just a few days after my middle son was born; in the midst of our new baby fog and sleep deprivation, we managed to eat an absurd amount of this dish. I promised Sean I'd get the recipe from her as soon as possible. She shared the recipe with me and this pasta has made regular appearances on our table every since. This is easily the best chicken and pasta dish I've ever tasted!

Street Art in Montreal

Peek into the street art of Montreal with Barefeet In The Kitchen
Cobblestone sidewalks, tree lined streets, and beautiful architecture are just the proverbial tip of the iceberg to be seen when exploring Montreal. Those of you that hang out with me on Instagram or Facebook know that Sean and I spent an amazing week there this summer. It was my first trip out of the country as an adult, and it was everything I dreamed it would be.

Old Fashioned Iced Oatmeal Cookies {traditional and gluten free recipes}

Old Fashioned Iced Oatmeal Cookies, traditional and gluten free recipes included
Soft, slightly crisp oatmeal cookies iced with a simple glaze are an old-fashioned treat that begs for a glass of milk or a cup of coffee. I devoured two of these for an afternoon snack with the kids, and then packed up the rest and sent them to work with Sean. I knew I'd be eating them all day long if I didn't get them out of the house quickly!

Whipped Strawberry Honey Butter

The BEST Strawberry Butter recipe by Barefeet In The Kitchen
Whipped Strawberry Honey Butter is fluffy, creamy, sweet, and buttery goodness in a pretty pink package. This will be delicious on toast, scones, pancakes, popovers, muffins, breads, and just about anything else you might want to butter!

I spent this past weekend playing in the sun and enjoying some fun and relaxing downtime with two of the best friends a girl could ask for. We stayed at the gorgeous Phoenician resort in Scottsdale, ate as much amazing food as we were able, and greatly enjoyed being waited on and pampered all weekend!

On Saturday, we wandered out to Scottsdale Fashion Square and finished our morning with lunch at NM Cafe in Neiman Marcus. I hadn't eaten there before, and in case you haven't either, I'll tell you that our favorite part of the meal was the little dish of strawberry butter and the popover that they brought out while we waited for our meal. I knew that amazing butter would be re-created in my kitchen just as soon as I got back home!

Creamy Mexican Chicken and Corn Soup

Creamy Mexican Chicken and Corn Soup recipe by Barefeet In The Kitchen

Tender chicken and sweet corn are combined in a creamy soup with just enough heat to warm your mouth without setting it on fire. My entire family loves this soup, even my non-spice loving middle son. Combine that with the fact that it takes barely 20 minutes to pull this soup together, and you'll understand why this is a frequently eaten meal in our house! Quick soups are one of my favorite ways to get dinner on the table in the fall.

I loved our homemade corn stock last year so much; my plan for saving it in the freezer didn't happen. I just kept using it until it was gone. (If you don't have corn stock stashed away, chicken stock works great too.) I'm counting down the days until the corn festival, so that I can get my fill of all our favorite corn recipes once again!

In the meantime, if you are lucky enough to already have fresh corn at your fingertips, here are a few more great recipes that we make every year:

Asparagus, Bacon, Corn, and Sweet Potato Skillet

Asparagus, Bacon, Corn and Sweet Potato Skillet recipe by Barefeet In The Kitchen

Tender, slightly browned sweet potatoes, salty bacon pieces, fresh corn cooked just until warm and asparagus that is tender and still just a little bit crisp are all tossed together with just a drizzle of balsamic. This was something unexpected that I pulled together for a dinner side dish a few years ago, using odds and ends from the refrigerator.

I enjoyed the sweet and salty mix of the potatoes and the bacon  combined with the crunch of the fresh vegetables. This is a great mix of textures and flavors. My kids liked this so much, my oldest asked for seconds. Seconds of a vegetable side dish? That earned this dish a spot in our regular line up.

I've served these vegetables on their own as a casual lunch and as a side dish to accompany beef, chicken, or pork. I've added the leftover vegetables to a quiche, and I've tossed them onto a salad. This is one of the most versatile vegetable dishes you can imagine.

Chocolate Raspberry Brownies {traditional and gluten free recipes}

Chocolate Raspberry Brownies, gluten free and traditional recipes by Barefeet In The Kitchen
These are rich, dark chocolate brownies, filled with bites of fresh tart raspberries. Chocolate and raspberries are a spectacular pair, aren't they? Before I took the first bite, I knew that I would like these brownies, (the house smelled fantastic while they were baking) what I didn't anticipate was the intense raspberry flavor that was in every bite. I more than liked these brownies, I absolutely loved them and I'm already looking for another excuse to make them again.

I shared this batch of brownies with a friend's family and the message she sent me later still has me laughing, "Son, age 9, mouthful of brownie & something chocolate-y in his fingers: "This brownie thing is...(gulp, thoughtful gaze at the ceiling)...it's PERFECTION. (Happily moans, then licks chocolate off fingers)... I heartily agree!"

I'm calling that a total win. I enjoyed a brownie on it's own and thought it was heavenly, then I topped a warm one with a scoop of vanilla ice cream: Pure chocolate raspberry heaven!

Crackling Pork Belly and a $500 GIVEAWAY!

Recipes for how to cook crackling pork belly in the oven and for pan-fried pork belly in just 15 minutes!
Crunchy, crackling pork belly has finally been introduced to my family and we have fallen for it, hook, line, and sinker! I have two mouthwatering recipes for you today AND a $500 giveaway. Be sure to read all the way through to the end to find out how you can win $500 to put towards fulfilling your Pork Bucket List dreams. I'm having a blast with my own list and I can hardly wait to see what one lucky reader is going to do with theirs!

It's fun and simple, make a list of three to five pork-related items or experiences that you've never done, that you would love to do. The National Pork Board is going to help one Barefeet In The Kitchen reader fulfill their #PorkBucketList dreams!

Wouldn't it be fun to go to a pig-pickin'? How about making your own bacon? Ever wanted to learn how to smoke meat? What town in America has the best pork tacos? How about grinding your own sausage? Have you tasted pig's ears? How about bacon candy? Have you tried pork belly?!

Prior to starting my own Pork Bucket List, I had only tasted pork belly once and I LOVED it. This is a rich, flavor packed meat and a little bit of it goes a long ways. Pork belly is much more flavorful than a traditional pork roast, with a hint of the smokiness of bacon. Tender bites of meat that almost melt in your mouth, next to crunchy, crackling skin is a fantastic combination.

Peaches and Cream French Toast Casserole

Peaches and Cream French Toast Casserole with Praline Topping recipe by Barefeet In The Kitchen
This simple overnight french toast casserole with fresh peaches and a buttery, brown sugar and pecan topping is sure to make everyone smile. We love to sit down to an extra special weekend breakfast whenever we can and if I am able to prep the meal the night before, that makes my weekend morning all the better! (More sleep + less work = better mornings!)

It took me just a few minutes to slice the bread and the peaches, stir together the cream and eggs, and then tuck the dish into the refrigerator for the night. The next morning, I turned on the oven while I started the coffee. I set the cold casserole in the warm oven and sat down to sip coffee and watch cartoons with the kids; while breakfast baked and filled our house with the delicious aroma of baking peaches. I'm reminded once more how nice make-ahead breakfasts are for relaxed mornings!

Do you prefer savory over sweet? Here are a few more hearty breakfast casseroles that can be made the night before and can also be frozen for quick breakfast reheating!

Crispy Cholula Chicken

Crispy Cholula Chicken {Oven-Fried} - recipe by Barefeet In The Kitchen
Juicy, flavorful chicken in a spicy, crunchy crust is possible without a frying pan or a minute spent standing in front of the stove. This oven baked chicken is made crunchy with a sprinkling of an unexpected ingredient. I remember tasting chicken breaded with corn flakes years ago, but it sure didn't taste anything like this! A reader mentioned corn flake crusted chicken to me the other day and one thing led to another. I wanted to play with that idea and it turned out amazingly well.

My family couldn't guess the ingredient in the crunchy crust, and even after I told them what it was, they still didn't believe that there were corn flakes in the recipe. I've now made this chicken three times, with boneless skinless chicken breast fillets, with boneless skinless chicken thighs, and with bone-in chicken drumsticks. The chicken turns out juicy inside and crunchy outside every single time!

Blueberry Lemon Coffee Cake {traditional and gluten free recipes}

Blueberry Lemon Coffee Cake - gluten free and traditional recipes by Barefeet In The Kitchen
Blueberries and lemon combine in a coffee cake that is worthy of any occasion. I have a huge grin on my face today and I am positively giddy to tell you that this cake, this fantastically moist, perfectly sweet blueberry coffee cake with a hint of lemon, is the best blueberry coffee cake I have ever tasted. I am so happy with it, I practically danced across the kitchen after I tasted it.

I ate a slice of this cake right after I finished photographing it this afternoon and I ate another slice after dinner. Do I even need to tell you what I'll be eating for breakfast tomorrow? This is a dangerous kind of awesome, my friends.

Fun Back-To-School Lunch Ideas {and healthy too!}

A Collection of Back-To-School Lunch Ideas by Barefeet In The Kitchen

It's that time of year! Summer is coming to an end, and the routine of life is returning.  School work, martial arts practice, library days, and Lego club keep us moving in my household this time of year. Ever notice that when life speeds up one of the easiest things to let slip is healthy eating habits? One way that I try to keep my children making healthy food choices is to plan simple and fun lunches.

Whether your kids are off to school, or at home, I hope these ideas make it easier for you to provide yourself and your kids some easy and healthy lunches. In an effort to keep my kids trying new foods I play with lots of different types of veggies and dips.  Everything is more tasty when you can dip it, right?

Salted Caramel Ice Cream

Salted Caramel Ice Cream Recipe - by Barefeet In The Kitchen
Inspired by our love of warm caramel sauce and homemade ice cream, this is a wonderfully decadent ice cream. I've already made it twice in the past couple weeks. The first time I made this was on a weekend my husband was out of town. I tasted it and then forced myself to hand the whole batch to a friend, because I knew I couldn't be trusted with it on my own. (Yes, I have ice cream issues.) I made it again to share with my family this week and it was a huge hit.

Salted caramel is a beautiful thing. If you haven't yet tried it, get to the stove and stir some together just as soon as possible. Just a tiny sprinkling of salt stirred into some warm caramel, one taste and you'll understand its popularity. And, if you haven't made your own caramel sauce yet, get on it! You'll thank me. Homemade caramel sauce is dangerously easy to make and like so many other things, it tastes ten time better than anything you can buy from a store.

Vegetable Tian

Summer Vegetable Tian Recipe with Zucchini, Tomatoes, Potatoes by Barefeet In The Kitchen
Fresh zucchini, tomatoes, and potatoes are sprinkled with herbs and then roasted until tender; a bit of cheese and then a little more roasting until everything is browned and slightly caramelized. A versatile side dish for almost any meal, I've served this with roast beef, Italian fried chicken, skillet pork chops, and many other dishes.

Vegetable Tians are so pretty to look at, you might think they are a complicated side dish. My youngest son helped me layer this one: he calls it a vegetable puzzle. Layer the alternating slices around the dish and fit them in as best you can. The beauty of the tian is really in how simple it is. You aren't standing over a stove sautéing anything more than the onions. Once everything is in the dish, cover it, bake, and walk away. That is my favorite kind of cooking!

Crunchy Brownie Crisps {traditional and gluten free recipes}

Crispy, crunchy, wafer thin brownies, for snacking or dessert - gluten free and traditional recipes by Barefeet In The Kitchen
Crispy, crunchy, wafer thin brownies are spectacularly tasty for snacking on their own or alongside a dish of ice cream. (They are also delicious as ice cream sandwiches!) I tried the original version of this snack for the first time while I was in Miami, and from the very first bite, it was one of the most addictive store-bought snacks I've ever tried. We were all hooked. Each brownie crisp tastes like the very best corner bite of a traditional pan of brownies.

If you haven't tried this yet, you really do need to. It's a snack / dessert like no other! I knew I needed to create my own version so that my family would be able to enjoy it as often as we wanted. Lucky for me, my friend Rebecca beat me to it and I barely had to adapt her recipe to meet our needs.

This is a gluten free homemade version of the very well known crispy crunchy brownies. My kids went crazy over this treat and my friends and I enjoyed ours with bowls of ice cream last last night. When I tell you these babies are crunchy, don't just take my word for it, check out this 3 second video:

Italian White Bean, Cabbage, and Sausage Soup

Italian White Bean, Cabbage, and Sausage Soup (ready in 30 minutes or less!) recipe by Barefeet In The Kitchen
Today, I'm giving you the first soup recipe for the fall and I couldn't be more excited about it. This hearty soup is full of flavor and it's filled with far more vegetables and meat than broth. Best of all, this soup comes together in under 30 minutes! I am so very ready for cooler weather and this is my wishful thinking for more of the rain that we were lucky enough to see here in the Arizona desert this week.

This was a dinner that I pulled together without any advance planning at all. (The ingredients were about all we had in the house after a couple weeks of travel!) This soup turned out so well that my husband commented twice about how much he liked it, so I decided to photograph my dinner before sitting down to eat it!

If your weather is cooling off and you're ready for even more soup recipes, here are some of our best soups that go from start to finish in less than 30 minutes:

Ginger Chicken and Broccoli Stir Fry

Ginger Chicken and Broccoli Stir Fry with Oyster Sauce recipe by Barefeet In The Kitchen

Tender strips of chicken, and hot, crisp vegetables combined with an Asian inspired sauce is one of the easiest and most popular ways that I get dinner on the table. Broccoli is one of my favorite vegetables to use in a stir fry. The florets hold so much sauce and each bite is full of flavor. The oyster sauce in this recipe adds a savory note that we all enjoyed.

Most of our Asian dishes incorporate a bit of heat or spice, however this is a very flavorful and delicious dish that my whole family enjoyed without any heat at all. If you're like me and can't have too many easy stir-fry dinners, here are a few more you'll want to save for later!

15 Delicious Gluten Free Desserts - NO special ingredients!

A collection of easy, inexpensive, gluten free dessert recipes that require no special ingredients at all! by Barefeet In The Kitchen
Easy, inexpensive, gluten free dessert recipes that require no special ingredients at all! These are my go-to desserts anytime I'm working outside of my own kitchen, and they are the recipes I give to anyone who asks for simple and uncomplicated gluten free desserts.

Years before I started blogging, when I first started baking gluten free treats for a friend of mine, the recipes I found were completely overwhelming. Special flours, starches, and gums, careful treatment of the doughs, delicate baking instructions, and confusing instructions, all combined to make me toss more than a few cookies into the trash.

I promise you that NONE of these recipes are like that. These are some of the easiest gluten free desserts we make and every last one of them can be made with ingredients that are likely already in your pantry. No specialty flours, tools, or skills required!

Many times, when you need a gluten free dessert, it's for a dinner guest or a friend, and it just doesn't make sense to buy several different specialty flours just to make a single recipe. (On the other hand, if you plan to do more than the occasional gluten free baked goods, I have a huge index of gluten free sweets and treats that we love. Try the simple recipes below, and then dive on in and pick up the flours for the rest of them!)

This collection of desserts is perfect for any occasion; a special dinner or a gift for a friend. I bake gluten free at least 90% of the time and I can happily promise you that no one will realize they are eating a gluten free treat. Several of these recipes are also naturally diary free as well. Enjoy!
